What is Tom's Oyster Shack?
A modern interpretation (with an emphasis on sustainability) of the clam and oyster shacks dotting the coast of America from Maine to Texas. Memories of easy going luxury and good times from Tom’s childhood and youth.
Oysters are ecosystem engineers. An adult oyster filters 200 liters of water a day, and removes excess nutrients, such as nitrogen which reduces the chance of algae blooms and red tides, as well as reintroducing oxygen into the water vital for fish and other marine life. Oyster reefs reduce coastatl erosion, protect saltmarsh, and act as carbon sumps. The responsible farming of oysters actually promotes the reinvigoration of our oceans. So you can eat them with a healthy conscience.

Oysters are naturally one of the most sustainable seafoods, and we take that principle further here.
The shack runs with minimal plastic, minimal waste and a clear purpose: serve great things, leave no trace.
Our wines and beers come exclusively from barrels, which are returned and recycled, reducing significantly packaging waste.
It is a lighter way to enjoy bold flavors, and it is how we keep the experience clean, conscious and truly fresh.

The man behind Tom´s Oyster Shack
Meet Tom.
After years running the floors, doors, and bars of some of New York and Los Angeles’ most famous restaurants, from The Palm, Le Colonial, to the bar at Vanity Fair’s Oscar Party, Tom used his experience to open Holberg no19.
A modern day Harry’s bar just off of Nyhavn in Copenhagen, where an international clientele including IT start ups, businessmen, and tourists mingled with local Danish artists, authors, and actors over personally curated tapas, wine, coffee, and beer. It’s been featured in the Guardian, Politiken, Alt for Damerne, Rick Steves guide to Europe and Scandinavia, as well as commercials, films, and TV series. In Danish author, Niels Barfoed’s book “Begyndelser Til Enden – en Caféfortælling”, he calls it “Tom”, which is maybe why most people know it just as “Tom’s”.
Most recently, Tom has used his expertise at Matrikel 1, SoHo House, Marchal at D’Angleterre, and helped relaunch the classic Frederiksberg restaurant, Sans Souci.

Incredibly delicious lobster pasta 🍝 at Tom‘s Shack! 10/10 service, great value for the price and wonderful atmosphere 🥰. An italian dream in the middle of Copenhagen. A must visit while your time here. ❤️
Soooooo delicious! And the prices are very reasonable! My favourite lobster and shrimp roll in Copenhagen. This place felt like such a hidden gem, we went on a Saturday and it was not busy at all. Service was also super friendly, we are so glad we went. You order at the counter and food is brought to you. The inside is very cosy and hyggelig especially at night with the candles.
Came for lunch was really excellent however is pricey. I had 6 oysters a soup and water which came out to 60 usd. Warm cozy atmosphere very good oysters.
I have passed this restaurant many times before, but today I decided to stop by and get something to eat. I had 4 wonderful oysters with mignonette and a homemade hot sauce , a delicious tuna melt sandwich and a refreshing homemade ice tea. It was all very delicious and at a good price too. I will definitely come back soon to try their famous lobster roll.
